Fresh Guacamole

Hey guys!  I’m back today with another recipe.  If you missed my post where I talked about starting to share recipes you can go back and look at it here.  It was a recipe for some delicious Loaded Baked Potato Salad.  I definitely recommend making some.  It’s perfect BBQ food!  But now let’s get into today’s post.

I think it’s safe to say that if you live in AZ you like Mexican food.  At least you should.  Maybe we should make that a rule?  I happen to love tacos.  A friend of mine joked with me saying I would serve anything as a taco.  Carne asada, rotisserie chicken with corn and black bean salsa, and bbq pulled pork with coleslaw happen to be my favorites!  Guacamole is like the cherry on top of the taco sundae!   It’s delicious throw on top of your tacos.  Except the pulled pork taco.  I wouldn’t recommend that haha.  Or just enjoy it with a bag of tortilla chips.  Either way you won’t be disappointed.  Here is my recipe.

Fresh Guacamole:

4-5 ripe avocados

1/2 small sweet onion-finely chopped

1 jalapeno*-finely chopped

2 plum tomatoes-seeded and chopped

handful of chopped cilantro

2-3 cloves of garlic**

juice of 2-3 limes

salt to taste

1. In a medium bowl mash avocados until smooth.  You can juice a lime over them to help mash them a little easier.

2.  Stir onion, jalapeno, tomatoes, cilantro, and garlic into mashed avocado.

3.  Squeeze lime juice over the guacamole.  Taste as you go and add more as desired.  We like ours extra lime-y so we usually use about 4 limes.

4.  Add salt, taste, and adjust as needed.

*If you like spicy leave in the all or some of the seeds and ribs.  I like mine with a little kick so I leave in the seeds and ribs from half of the jalapeno.  My husband likes it extra spicy so sometimes we add more jalapenos for him.  If we are making it for a crowd we take out all the ribs and seeds.

**I recommend using a mircoplane or garlic press for your garlic.  No one wants to bite down on a chunk of raw garlic.

Now just grab some chips and dig in!
