Hey peeps!! So I’m doing something a little different today. Today I will be doing my first food post. It only makes sense because I loooooove food! And I love my little blog so they are a natural match haha.
So, for Mother’s Day we BBQ’d with my family. I decided to make some Loaded Baked Potato Salad. I had seen a few on Pinterest but I didn’t go by any that I saw on there. They were more inspiration photos to look at. I just thought of the things I love on a baked potato and threw it all together. It was pretty delicious! Here’s the thing…I’m more of a throw everything in by eye kind of girl. But I’ll try to give you some measurements to go by.
Loaded Baked Potato Salad–For a Crowd:
2 3Lb bags of red potatoes
16oz tub sour cream
2c miracle whip
2-3T bacon grease
2c shredded cheddar
1/4c chopped green onion
salt, pepper, and paprika to taste
1. Chop and boil potatoes until tender. Drain.
2. Cook bacon until crispy. Set 2-3T of grease aside to cool.
3. In a large bowl mix sour cream, miracle whip, and cooled bacon grease.
4. Once potatoes are cooled toss potatoes, chopped bacon, cheese, and onions with the dressing. Season to taste.
